Mango Pie with Cookie Base

Ingredients

2 cups Sweet and Divine mango chunks

1 cup whipping cream

1 cup of condensed milk

1 teaspoon vanilla extract

1 teaspoon unflavored gelatin

1/4 cup water

1 package of Maria cookies

1/4 cup melted butter

Preparation

  1. Crush the cookies in a food processor until you obtain fine crumbs.
  2. Mix the crushed cookies with the melted butter and press the mixture into the bottom of a pie plate. Refrigerate while you prepare the filling.
  3. Hydration of the gelatin: dissolve the gelatin in the hot water and let it cool.
  4. In a blender, mix the mango, whipping cream, condensed milk, vanilla and dissolved gelatin. Blend until you obtain a smooth mixture.
  5. Pour the filling over the cookie base and refrigerate for at least 4 hours, or until the pie is firm.
  6. Garnish with more mango before serving.
